Ingredients
- 4 thick cod fillets
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons olive oil
- 1 medium onion
- 2 cloves garlic
- 1 tablespoon ginger
- 1 can full-fat coconut milk
- 3 tablespoons freshly squeezed lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Sauté chopped onion until translucent, then add minced garlic and grated ginger; cook for another minute.
- Stir in coconut milk, lemon juice, and zest; simmer for about 5 minutes.
- Place cod fillets in a baking dish, season with salt and pepper, and pour the sauce over them.
- Bake for approximately 25 minutes or until the fish flakes easily with a fork.
